Of course I am trying to make people around the world to try avocado in sweet recipes, as we usually have in Brazil
The most common way to have it here is mashing it adding some sugar and a touch of lemmon juice, but the recipe I bring here is a beautiful and delicious cake
Ingredients
1 big avocado (3 or 4 small ones)
1/2 cup of oil
2 cups of wheat flour
1 cup of sugar
4 eggs
1 tbs of baking powder (if you are not using self-raising flour)
Preparing
Pre-heat the oven 180 ~ 200 celsius (350 F)
Mix the flour and sugar in a big bowl
Blend the eggs, oil, sugar and avocado ('course just the pulp) until get a nice cream
Now mix altogether on the bowl using a wisky or fuet
Transfer it to a greased pan and bake in 180 ~ 200 celsius (350 F) for about 35 minutes.
